1.
chocolate cookies
Get
Pamela's Products Ultra Chocolate Brownie Mix. Use the recipe for Low Fat/Oil Free Brownies, but substitute ¼ cup Egg Beaters for the egg, add ½ cup flour (most any kind), add 1 tablespoon canola oil, add ½ cup walnut pieces, and use ½ cup rather than ¼ cup water for this recipe. Also, make 20 cookies rather than any brownies. Bake on a greased, air baking cookie sheet for 15, not 20 minutes.

2.
chocolate chip cookies
Get
Sunspire Grain Sweetened Chocolate Chips, semi-sweet, a great snack alone but even better in cookies. Then get I Can't Believe It's Not Butter-Light, Jolly Time Buttery Seasoning, Lundberg Sweet Dreams Nutra-Farm Brown Rice Syrup, and Nu Naturals White Stevia Pure Extract. Cream ¼ to ½ cup of the pseudo-butter (depending on the richness desired), 1/3 cup rice syrup, ½ teaspoon liquid vanilla extract, and 20 drops (or more depending on sweet tooth) liquid stevia extract in a mixing bowl. Add 1/8 teaspoon stevia extract powder (also Nu Naturals), ½ teaspoon baking soda, 1/4 teaspoon of the buttery seasoning, ½ cup Egg Beaters, 1 cup whole wheat pastry flour, 1 cup rolled oats and mix. Then add 7/8 cup of the chips and mix some more. Spoon 20 cookies onto a greased air baking cookie sheet and bake these at 350 degrees for 15 minutes.  Loosen the cookies by twisting once they've cooled for a few minutes so the chips don't stick to the cookie sheet.

For extra-rich, extra-tender, super yumminess, use:
1/4c I Can't Believe It's Not Butter-Light
1/4c canola oil
1/3c rice syrup
1/2t vanilla
20 drops Nu Naturals White Stevia Pure Extract
1/8t stevia extract powder
1/4t Jolly Time Buttery Seasoning
1/2t baking soda
1 Egg Beater (1/4c)
1c whole wheat pastry flour
1c rolled oats
7/8c Sunspire Grain Sweetened Chocolate Chips
same instructions as above, as appropriate

NOTE: Since I made that recipe, I found a modification that makes them even yummier and healthier, especially if you're into LOW-CARB, Atkins styled food. Substitute
Joseph's Sugar Free Maple Syrup in place of the rice syrup. Use 1 cup of the chips and 3/8 teaspoon of baking soda and 1.25 eyedroppers of the Stevia extract. Use 325 degrees of heat.
